Lemon mousse

Ingredients

  • (Lemon mousse)

  • Lemon curd : 1-1/2 cup

  • Peeled lemon : 1 pcs

  • (Lemon curd for 1 _ 1/5 cup)

  • Egg yolks : 4 pcs

  • Granulated sugar : 134 gr

  • Grated lemon peel : 1 tablespoon

  • Badr lime juice : 80 ml

  • Salt : 1/8 teaspoon

  • Whipped cream : 2 cups

First, grate the sour lemon peel and set aside. After that, lemon curd should be prepared. To prepare lemon curd, put two container on the heat, pour a little water to heat and put the second one on the mouth of the container and put egg yolks, granulated sugar, lemon zest, lime juice and salt in a pot on top of the pot. Steam. Now with a whisk, stir until well combined, then continue stirring to cook the curd. Stirring constantly prevents the egg yolk from hardening. Stir for 10 minutes and cook until the mixture thickens. If the curd does not thicken, increase the heat and stir constantly. Then remove the pan from the heat. Cut the unsalted butter (or remove the salt and use salted butter) into 6 separate portions, then stir in the curd. The butter melts from the heat of the curd. Now with a whisk, stir until well combined, then continue stirring to cook the curd. Stirring constantly prevents the egg yolk from hardening. Stir for 10 minutes and cook until the mixture thickens. If the curd does not thicken, increase the heat and stir constantly. Then remove the pan from the heat. Cut the unsalted butter (or remove the salt and use salted butter) into 6 separate portions, then stir in the curd. The butter melts from the heat of the curd.Pour the curd into a glass or bowl and place a piece of plastic directly on top to reach the top of the curd. (This prevents the formation of skin on it). The curd continues to thicken as it cools, and after cooling, the plastic can be removed from the curd. Now put the lemon curd aside. Take a large mixing bowl to start preparing the mouse. First you have to add the lemon curd, whipped cream and grated peel of a lemon. When you have poured all the ingredients, take an electric hand mixer and mix everything together to keep the mixture in shape. Combining everything should not take more than a few seconds. The mixture should have a thick, mousse-like consistency, and this is a good indication that you did the job right. Once the stirring is done, it is time to move the mouse. Pour the mixture into your favorite dishes or cups (you can choose how to serve, but the recipe gives about five servings). Then place the filled mousse containers in the refrigerator for at least two hours to cool.
